I made these and they are very good. It doesn't call for it, but I had fresh raspberries so I added them in too, which made the muffins very moist.

Apple Cinnamon Paleo Muffins

2 cups almond flour
1/2 tsp baking soda
1/4 tsp sea salt
2 tsp cinnamon
1 lg. apple grated or chopped finely
1 T. fresh lemon juice
1/4 c. honey
3 eggs
2 T. coconut oil, melted

Preheat oven to 325 degrees and line muffin tins.

Mix dry ingredients in large mixing bowl.
Mix all wet ingredients in small mixing bowl and add to dry.
Combine well.
Fill tins 3/4 full and bake for 20-25 minutes, or until toothpick comes out clean.

Makes 9 muffins

Because I added raspberries, I got about 13 muffins

I would make that in a second in my preEnterolab test results time! I can not eat almonds! I still have about 8 lbs. of almond flour in the freezer, and it makes the best baked goods!!!

Does anyone have a recipe for baked goods without almond flour....low sugar...gf, df, sf ?? Has anyone used sorghum, millet or teff flour successfully?

I made these muffins last night with banana and pecans instead of apple. Wow!!! Amazing. My gluten eating boyfriend and co worker were both in shock at how good they were. I can't wait to experiment more. Thanks for sharing!!! Very Happy [/code]

I used 3 bananas and also included a handful of pecans. It yielded a dozen muffins. I just got more almond flour and plan on making some more.

Linda - you can substitute any other nut flour for almond. I don't know what the difference is, because I haven't used almond flour, but walnut flour works well.

I've made these with blueberries instead of apples and they are very good also :)
