This is really hard to find. Most have guar gum and sometimes xanthan gum too. Here are some that contain only coconut that Mary Beth told me about:

Trader Joe's Light Coconut Milk
Carib Creamy Coconut Milk
Let's Do Organic Coconut Cream(distributed by Edwards and Sons Trading Co.)

I just tried the third one. It's interesting.....a solid block of coconut cream. You cut off a piece and soak it in warm water to dissolve it. It is versatile because you can make the milk as thin or thick as you like. It is a little grainy though.

I have also found Tropical Traditions Coconut Cream Concentrate which is 100% coconut. It too is solid unless it is warmed a bit and then stirred. Water is recommended to make coconut milk as well.

Tropical Traditions has their own website and it's everything coconut including lots of recipes. I found a safe lip balm there as well.

Thanks, Kelly. I need to spend more time on the TT website. I was close to being out of coconut oil, so last Monday I ordered five gallons from there on the last day of a free shipping special. I got it for $27/gal., which was three dollars less expensive than I have found it anywhere else. Then a friend of mine, who is a wholesale distributor for TT told me she could get it for even less! I will have to check out the concentrate, and see what kind of a deal I can get on that! Wink

I found a website which sells another brand of coconut milk which is free of additives. The brand is Renuka coconut milk and the listed ingredients are only coconut kernel extract and water. I haven't tried it nor have I ever ordered from this online company however they have some other interesting products like almond and coconut flour as well as other gluten free products.

Chill it overnight. You could add a little vanilla bean, and a little of whatever
sweetener that you can use and whip it! Very Happy

I use the TJs lite one, and a full fat one by Golden Star, which I buy at Ralph's. It's the cheapest, and contains only coconut milk and water.

I'm just going to add some more info- I recently purchased canned coconut milk for the first time so I could try it in homemade ice cream. I found 3 different brands at a super Kroger- in 3 different places in the store and all different prices too. I tried 2.

The Native Forest organic brand was about $3 for 13.5 oz
It has guar gum added and is 22% fat.
It was separated in the can and the top half was very solid (like crisco)


the Kroger Brand was about $2
it has xanthan gum added and is 19% fat
It was all liquid and about as thick as evaporated milk.

By the way the first ice cream, well sherbet really, was blueberry - a beautiful color and had a fantastic flavor with the coconut undertone. A new favorite for me!

The second batch I made was peach and that didn't turn out quite as delicious- possibly because I tried to stretch the coconut milk with almond milk which didn't help the flavor.

I use Goya brand, which you can find in most stores. The ingredients are coconut milk, water, potassium metabisulfite. I usually has solids on top, but they mix in pretty easily.
