I made this:
Oatmeal Muffins [Gluten Free]

by: a Couple Cooks
Makes: 12
What You Need

2½ cups oats (or oat flour)
1 tablespoon baking powder
½ teaspoon kosher salt
1 cup milk
1 egg
2½ tablespoons honey
1 tablespoon olive oil
½ cup walnuts

What To Do

Preheat the oven to 350F.
To make the oat flour, place 2½ cups flour in a food processor and process until very fine.
In a medium bowl, whisk together 2½ cups oat flour, 1 tablespoon baking powder, and ½ teaspoon kosher salt. Add 1 cup milk, 1 egg, 2½ tablespoons honey, and 1 tablespoon olive oil. If desired, stir in ½ cup chopped walnuts.
Grease a muffin tin. Pour in the batter to make 12 portions.
Bake for 25 minutes until puffed and golden.

HORRIBLE!

So, I tried again, added a bit more bp and a little more coconut milk. Still horrible.

So, today, I put on my thinking cap and made these:
2 1/2 cups of oat flour - not totally ground fine.
1/2 tsp salt
1 tbsp bp
1 tsp baking soda
MIX TOGETHER:
1 1/4 cup coconut milk
2 tbsps olive oil
2 tbsps apple puree (I make my own using red delicious a fuji apples, boiled down until the apples caramelize slightly)
2 1/2 tbsps honey

Add to dry ingredients. Make sure the batter is not dry! If it seems to be add a little milk
Add chopped pecans if desired.

Bake until puffy and golden and slightly crispy.
These turned out lovely, moist and crumbly inside and crusty on the outside. Delicious with ghee.

so far I have had good luck with taking the regular recipe and replacing
flour - gluten free flour
eggs - 1/4 cup applesauce for each
milk - almond milk

also you can replace oil with applesauce (same measure)
instead of applesauce you can use puréed banana or avocado

I think your recipes probably don't have enough sweetener. Might want to use more honey.

There is no flour in this recipe, only oat flour. I don't use grain flours at all. I never found one I liked, and gave it up when I went mostly paleo.
I baked a lot and substituted just about everything for everything else until I broke my back and couldn't stand in the kitchen at all.
Then I had a major flair and went on a very abreviated diet. I have just started baking a bit again. This recipe is very quick and easy to make.
There is plenty of honey in it for me. I put ghee and apricot preserves on them, or apple butter (homemade).
These are the best muffins I have had since I went gluten free. They are light and tender, and toast really well. I slice them and put them under the grill. Delicious.

In the original message you were talking about 2 different recipes that were 'horrible'. I guess I misunderstood. Glad you found a recipe you think is delicious. IMO it helps us cope with being restricted from so many things if we can have a little treat.

I eat them for breakfast Paula. I slice them and put the slices under the grill. Great with homemade apple butter, honey or preserves.
