In my store cupboard I found a packet of Almond flour and proceeded to make the pancake recipe on the back of the packet. It flopped!

The Recipe
175gr Almond Flour
125mls milk (substituted almond milk)
1 egg

Method
Mix all the ingredients, cook pancakes in butter till brown.

Firstly, the mixture didn't hold together and my pancake was a mushy heap with no definition even though the bottom was very well cooked.

Secondly, I tried to revive the batter by adding two more eggs and a bit more almond milk because the recipe batter was really stiff and hard. The second batch also a failure.
Is there something the above recipe lacks, please help.

Does anyone have a simple recipe for a flat bread, chapatty, or plain biscuit using potato or almond flour.

Food Intolerances : Gluten, casein, soy, and avenin, (avenin is the prolamin in oats, which is equivalent to the gluten in wheat), beef, grapes, peanuts, cashews, almonds, (but nut butters seem OK except for peanuts), citric acid, chocolate, and agar.

Almond flour is kind of dense by itself, and IMO it's not ideally suited for making pancakes, but it can be used to make excellent paleo muffins. Check out this long thread (9 pages) for tasty variations on a basic recipe:

And for pancakes, I would highly recommend King Arthur Gluten-Free Pancake Mix. It's probably the best available, and some people prefer it over pancakes made with mixes using wheat flour. For a quick and easy recipe, quite a few members here have also used plantains (only ingredient) to make excellent pancakes. There are many plantain pancake recipes on the internet. Here's a slightly more "tricked out" recipe, for example:

Today I made a desperate search for baking recipes for almond flour........
This was indeed a good move, I found ten very interesting almond flour recipes that will suit.

I really fancy making the soda bread and sesame crackers. A bit later on tonight or tomorrow I'll make a batch of sesame crackers.

On a different note, soon after this I went to the kitchen to find a packet of potato crisps and to my horror found most include milk or buttermilk in their ingredients. I'm not really a potato crisp fan, just as well.
