Ah-ha!...well that makes me feel tons better that you were speaking past tense (I didn't catch that). But you still Rock! Wink

As far as Ice-cream....I can have a little bit of So-Delicious Cashew salted caramel flavor, and that is my treat once in a while Very Happy You are so right when we start feeling better we get braver! Not always a good thing...

HI, Erica. I'm glad that you were able to go on a trip with your mother. We never know how many of those life events we'll be able to enjoy and I'm so happy that you had a good time. I'm with all of you on the feelings about our diet, for some reason the servers always look at me when they're explaining the wonderful specials of the day. I nod my head and smile and then I order.....I try to keep it all in perspective. I'm happy that I can be out with my family and friends but I have fought back the tears at times, too. I was always a dessert eater and now I smile and say "no, thank you." I've said it 100 times before, but this is the best group ever to share our thoughts & concerns. Therapy at our fingertips! Laughing

Eric was right. Don't over think it.

We just traveled for eight days from NC to AR and KS. I only packed a small cooler with ham in sandwich bags, my coffee creamer. Non perishables; GF potato chips, beef jerky with few ingredients, and rice cakes, cashew butter and small cups of applesauce which I never cracked open. While traveling, at a Subway, I took in my ham and potato chips while my husband had a sandwich. At an Arby's I ordered a roast beef sandwich, took off the top bun and just ate the meat with my chips. If needed, I would munch on beef jerky in the car. We ate at a Mexican restaurant with friends, twice. I had corn chips and salsa and some guac, corn tacos with chicken and a little lettuce and rice. At another restaurant I was able to order just fine from the menu, being careful, of course.

We stayed at two different friends homes and they were great. I had emailed what I could eat. I taught them both how to roast the vegetables they had to go with our protein. And I made it clear that it would not bother me at all to see them eat what I could not, that I was used to it. I ate peaches and bananas at their homes, too.

Pre MC, I had more of an issue with constipation, going 2-3 times a week. My internist, several years ago, suggested I take magnesium which alleviated the problem. Whenever I traveled, my bowels would go on strike. I found that was also somewhat true on this trip as I had no bowel movement three of the days. A little more magnesium seemed to help or I would increase my fibre with nuts.

It felt so good to know that I can travel in the states after several months of healing. Don't let fear hold you back.

Food Intolerances : Gluten, casein, soy, and avenin, (avenin is the prolamin in oats, which is equivalent to the gluten in wheat), beef, grapes, peanuts, cashews, almonds, (but nut butters seem OK except for peanuts), citric acid, chocolate, and agar.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
